Ploughman Sandwich

Recipe in honor of the 153rd British Open

  • 8 slices (3/4-inch thick) crusty bread
  • 1 cup Branston pickled chutney
  • 1/4 cup mayonnaise
  • 4 teaspoons grainy mustard
  • 4 slices cheddar cheese
  • 12 slices sodium-reduced deli ham
  • 1 tart apple (such as Granny Smith), sliced
  • 1 1/2 cup packed cress
  • 2 radishes, thinly sliced
  • 2 mini-cucumbers, thinly sliced
  • 4 caper berries (optional)
  • 4 pickled cocktail onions (optional)

Spread Branston pickled chutney onto one side of four bread slices. Spread mayonnaise onto one side of remaining four bread slices; top with mustard. Layer cheddar, ham, apple, cress, radishes, and cucumbers over Branston pickled chutney; sandwich with remaining bread, mustard side down. Thread one caper berry and one cocktail onion onto each of four cocktail skewers or toothpicks (if using); skewer tops of sandwiches.
